Vegan Braised Tempeh - Sub & English Recipe
Ingredients:
- Tempeh (Firm Tofu Skin Tempeh recommended): 300g
- Onion: 1 medium, sliced
- Ginger: 3-4 slices
- Star Anise: 2-3 pieces
- Cinnamon Stick: 1 piece
- Sichuan Peppercorns: 1 tsp
- Rock Sugar: 2 tbsp
- Soy Sauce: 4 tbsp
- Vegan Oyster Sauce: 2 tbsp
- Rice Wine: 1 tbsp
- Water: 500ml
- (Optional) White Pepper Powder: to taste
- (Optional) Cornstarch slurry (1 tbsp cornstarch + 2 tbsp water): to thicken
Instructions:
- Cut the tempeh into bite-sized pieces. Blanch in boiling water for 2-3 minutes to remove any bitterness. Drain and set aside.
- In a pot, combine onion, ginger, star anise, cinnamon stick, Sichuan peppercorns, rock sugar, soy sauce, vegan oyster sauce, and water. Bring to a boil, then reduce heat to low and simmer for 10-15 minutes.
- Add the blanched tempeh to the pot and bring to a boil again. Reduce heat to low and simmer for 30-40 minutes, turning the tempeh occasionally.
- (Optional) If desired, thicken the sauce with cornstarch slurry during the last 5 minutes of cooking.
- Remove from heat and let cool completely before refrigerating. The flavor will deepen as it chills.
